No Guilt Waffles

Everybody loves waffles. Hearing that word you’re probably thinking calories up to the roof and something to stay away from when trying to eat better. But what if I told you that with a creative twist to this recipe you can turn it into a mouth watering sugar/gluten/dairy free comfort food!
As a satisfying midday snack , a bread replacement or even a pizza base, they will broaden your meal options and turn “diet restrictions” into delicious opportunities.

Ingredients:
1/2 cup brown rice flour
3/4 cup millet flour
3/4 cup sorgham flour
1 1/4 tsp. Xantham gum
1/2 tsp. Salt
1 unflavored gelatin
1 TLB. baking powder
1 1/2 cups water
1/3 cup coconut oil
1/2 cup oil (I use grape seed oil)
3 eggs

Directions:
Mix all the dry ingredients in a bowl.
In a mixer bowl, combine all the wet ingredients. Then, gradually add the dry ingredients, stirring well after every addition.
Fry using a waffle maker.

Note: you can switch the flours with different gluten free flours, as long as you stick to the measurements.

I personally don’t like them sweet, but the recipe originially calls for 1/2 a cup of stevia, so if you have a sweet tooth feel free to add that and enjoy😃
